Together with her husband Finnbar McCarthy, Eleanor revitalized Springfield Farm, a 200-year-old property near Apple Hill, into an organic operation producing maple syrup, honey, vegetables, and garlic. The farm also offers agritourism experiences such as disc golf, yurt accommodations, and farm-to-table events in collaboration with Indigenous chefs and Michelin-starred culinary talent. Beyond farming, Springfield serves as a hub for environmental education, hosting experts and programs to foster biodiversity and stewardship.

Eleanor reflects on the deep historical roots of Glengarry, the importance of preserving ancestral homes, and the need to document personal and family histories before they are lost. Her work blends heritage preservation, sustainable agriculture, and community engagement—creating a living model of how culture, environment, and storytelling can sustain one another.
